Dutch Babies (or baked German pancakes)

This delicious recipe came about from a recipe I wrote down years ago, then lost, then found another that wasn’t quite the same, then the same thing happened again (twice over- I wasn’t the most organized back then). It was at that point that I realized this recipe is easily adaptable and since no two ways were the same, I would have no problem making it my own. It’s become a tradition in our family to serve these on Christmas morning, however, there are no hard and fast rules that limit them to that! Make them a Sunday morning staple or when surprise-family is visiting! You’ll be famous!
These Dutch Babies are a quick-to-make breakfast (that can be eaten at any time of day)… I say this because I made a double batch for breakfast this Christmas morning, then realized at about 8 pm Christmas night that I never took a single picture! So guess what’s in my oven now? Yup. The things I do for my family (and my readers and friends!) Plus, I’ll do just about anything to use my cast iron!
No one is complaining about having them again- they’re just that good 😉 They’re light and slightly sweet (depending on how much powdered sugar and syrup you use!) and kids LOVE to watch these things rise in the oven (I can’t explain how it works, but maybe the pictures will help!)
